13 - 1/4 cup grated Parmesan cheese or vegetarian alternative
14 - Fresh basil leaves, to serve

# How-To:

01 - Heat olive oil in a large pot over medium heat. Add sliced garlic and red onion, sauté for 2 to 3 minutes until fragrant and softened.
02 - Add spaghetti, peas, spinach, and cherry tomatoes to the pot. Pour in vegetable broth and bring to a boil.
03 - Season with salt, black pepper, and red pepper flakes. Stir occasionally to prevent pasta from sticking to the bottom of the pot.
04 - Cook uncovered for 10 to 12 minutes, or until pasta is al dente and most liquid has been absorbed. Stir in lemon zest.
05 - Remove from heat. Divide among serving plates and top with Parmesan cheese and fresh basil leaves.

# Expert Advice:

01 -
  • Everything cooks in one pot so cleanup is practically nonexistent
  • The pasta absorbs all the vegetable flavors making it taste like it simmered for hours
  • Ready in under 30 minutes but tastes like something from a fancy Italian restaurant
02 -
  • The pasta will continue absorbing liquid after you turn off the heat so leave a little extra broth in the pot
  • Stir more frequently toward the end of cooking as the sauce thickens to prevent sticking
  • Frozen peas work perfectly here and actually hold their shape better than fresh ones in the simmering broth
03 -
  • Break the spaghetti in half if your pot is not tall enough for long noodles
  • Use a vegetable broth you would drink on its own since it reduces down significantly
  • Add the red pepper flakes right at the end if you want to control the heat level
