04 - 1/2 cup plain Greek yogurt or cottage cheese (approximately 4 oz)
05 - 1 scoop (about 1 oz) vanilla or unflavored protein powder

10 - 1 tbsp unsalted butter or coconut oil (0.5 oz)

→ Optional Toppings

11 - Fresh berries
12 - Sliced bananas
13 - Extra Greek yogurt
14 - Maple syrup

# How-To:

01 - In a large mixing bowl, whisk together eggs, milk, Greek yogurt or cottage cheese, protein powder, maple syrup, vanilla extract, cinnamon, and salt until smooth and homogenous.
02 - Heat a large nonstick skillet or griddle over medium heat and coat with half the butter or coconut oil.
03 - Dip each bread slice into the egg mixture, allowing it to soak for 10 to 15 seconds per side to absorb the custard thoroughly.
04 - Place the soaked slices onto the skillet, cooking for 2 to 3 minutes per side until golden brown with a custardy interior. Add remaining butter or oil as needed.
05 - Serve immediately, garnished with optional fresh berries, sliced bananas, extra Greek yogurt, or maple syrup to taste.

# Expert Advice:

01 -
  • It actually keeps you full instead of leaving you hungry two hours later.
  • That custardy center feels decadent while the protein powder does the heavy lifting in the background.
02 -
  • The protein powder must be whisked completely smooth or it creates weird gritty pockets that taste chalky—spend the extra 30 seconds on this.
  • Stale bread is non-negotiable; fresh bread turns into mush faster than you can flip it, and that's a breakfast tragedy.
03 -
  • Make the custard the night before and refrigerate it—the bread soaks more evenly, and breakfast happens faster in the morning.
  • If the first batch cooks too fast at medium heat, your skillet might run hot; lower the heat slightly and the next batch will cook more gently with better color.
