# How-To:
01 - Whisk bread flour, granulated sugar, active dry yeast, fine sea salt, ground cinnamon, ground allspice, ground nutmeg, and orange zest thoroughly in a large mixing bowl.
02 - In a separate bowl, blend lukewarm whole milk, melted unsalted butter, and eggs until fully combined.
03 - Pour wet mixture into dry ingredients. Stir with a wooden spoon or dough hook to form a rough dough.
04 - Knead by hand or with a mixer for 8 to 10 minutes until smooth and elastic.
05 - Add currants or raisins and knead briefly to distribute evenly throughout the dough.
06 - Place dough in a lightly oiled bowl. Cover and let rise in a warm place for 1 to 1.5 hours until doubled in size.
07 - Punch down dough and divide into 12 equal portions. Shape each piece into a smooth ball and arrange on a parchment-lined baking tray, spacing closely without touching.
08 - Cover the tray loosely with a clean towel. Let dough rise for 30 to 40 minutes until puffy.
09 - Preheat oven to 375°F.
10 - Mix all-purpose flour and water until a thick, pipeable paste forms. Transfer paste to a piping bag or zip-top bag with a corner snipped.
11 - Pipe a cross over the top of each bun with the prepared paste.
12 - Bake for 22 to 25 minutes until golden brown and hollow when tapped.
13 - While buns bake, whisk powdered sugar, orange juice, and orange zest to make a smooth glaze.
14 - Brush the warm buns generously with orange glaze upon removing from the oven.
15 - Allow buns to cool slightly before serving.
